As incomes have risen across a growing share of Indian households, diets have shifted toward more dairy, meat and processed food, each of which requires far more water and energy to produce than the cereal-based staples they are replacing. At the same time, ownership of air conditioners, refrigerators and private vehicles has climbed sharply, and each additional appliance or vehicle adds to both electricity demand and the water drawn to generate that electricity. The two trends compound each other: richer diets and richer lifestyles both pull on the same finite water and energy base, at a pace few cities' infrastructure was built to anticipate.
